something's gotta happen to those left over grilled vegetables. so here's what we had for dinner... cast iron roasted potatoes! in a cast iron pan was a party of olive oil, grilled potatoes, fennel, yellow bell peppers, a jalapeno pepper, turmeric, chili powder, cumin and sea salt. i topped it with fresh cilantro before serving. did i tell you that it takes about 10 minutes to cook this dish? i served it with fresh salsa on the side (nothing fancy - onions, tomatoes, cilantro, jalapeno pepper and salt). dan needed some protein... so into his plate went the grilled chicken breast (marinated in yogurt, orange juice, lemon peel, rosemary, salt and pepper).yummy dinner in no time!
